Recipe Semolina Sweet Kozhukattai

Ingredients

1 cup - Semolina
1 cup – Sugar
10 - Cashewnuts
3 cups -Maida
A pinch kesari powder
Oil - as needed
1 tsp – Cardamom powder
2 tsp - Ghee
Salt - as needed


Preparation :

For kesari

Heat ghee in a pan. Add semolina, fry till smell arises and set aside. Heat 2 cups of water in a vessel. Add semolina, kesari powder and cook. When semolina is cooked, add sugar and stir well. When the contents leave the sides of the vessel, remove the vessel from the stove. Heat ghee in a pan. Cut cashew into pieces, fry in ghee and add to the kesari. Add cardamom powder to the kesari and let it cool.    



For outer layer

Add hot water, salt to maida and prepare a dough. Let it cool. To prepare Kozhakattai. Make small cups with dough. Place the filling, close and set aside. Repeat the process till all dough is used. Heat oil in a pan. Add the kozhakattais, fry and set aside when done.

Note: This kozhakattai can be kept for 4 days. And can be in any shape you like round modak shape or flat
